Sweet and sour tenderloin

Material:

Pork tenderloin 200 g, wheat flour 10 g, rice flour 25 g, 1 soup spoon of rice wine, 3 soup spoons of light soy sauce, 3 soup spoons of vinegar, 1/2 tea spoon of sesame oil, 2 soup spoons of sugar, cooking oil 

Method:  
  1. Cut the pork tenderloin into pieces about 1*5*1 cm. Mix the tenderloin, rice wine, rice flour and wheat flour.
  2. Warm some cooking oil to about 60% cooked in a pan. The cooking oil should be about 2 cm high in the pan. Put the tenderloin pieces in the pan. Stir-fry with moderate oven for 1.5 minute. Take the tenderloin pieces out from the pan.
  3. Warm the oil to about 70% cooked. Put the tenderloin pieces in the pan. Stir-fry with moderately quick oven for 3 minutes. Take the tenderloin pieces out from the pan. Empty the pan.
  4. Put the tenderloin pieces, light soy sauce, sugar, sesame oil and vinegar in the pan. Stir-fry with moderately quick oven for 1 - 1.5 minute.
