Chinese dumpling Guotie with beef filling

Material:

Minced beef 200 g, celery 150 g, coriander 15 g, 1 tea spoon of salt, 2 tea spoons of light soy sauce, 1/2 tea spoon of sesame oil, garlic 1 piece, ginger 10 g, wheat flour 150 g

Method: 
  1. Mix the wheat flour and some water. Knead the dough until it becomes glossy but not sticky.
  2. Cook the celery in a pan until it becomes soft. Take the celery out from the pan. Squeeze the water as much as possile from the celery.
  3. Mix the minced beef, celery, coriander, salt, light soy sauce, ginger, garlic and sesame oil.
  4. Cut the dough into smaller parts weighting about 25 g each.
  5. Make a dough part into a wrapper with a pin roll. The edge of the wrapper should be thinner than another part. Put some of the mixture of step 3 on the wrapper. Pack the mixture by wrapping the edge of the wrapper together.
  6. Repeat step 5 until all the dough parts are used.
  7. Cook the dough parts with filling in a pan. After the water has boiled, put a half glass of cold water in the pan. Cook continually.   8. Take the dumplings out from the pan.
  9. Put a little cooking oil in a flat pan. Put the dumplings in the pan. Stir-fry with moderate oven for about 3 minutes.
