Hand made carrot and egg noodles


1 carrot (about 90 g), 1 egg, wheat flour, water

  1. Make the carrot into puree with a kitchen machine  (or cook/steam it firstly, then make it into puree).
  2. Mix the carrot puree, egg and some wheat flour.
  3. Knead the dough and add wheat flour if it is too wet until the dough is very glossy but not sticky. Wait for 15 minutes.
  4. Divide the dough into four parts. Make each part into a thin and flat piece. Sprinkle wheat flour on each dough piece.
  5. Fold each dough piece two or three times. Cut the folded dough piece into sticks about 0.3 cm wide.
  6. Unfold the dough sticks. Sprinkle with some wheat flour to prevent them from sticking with each other.
  7. Make Choumei with the noodles. Or cook the noodles with cooking water and eat them with some other food, such as meat and vegetables, and ingredients.
