Braised ribs

Material:

Ribs 400 g, 1.5 tea spoon of black soy sauce, 2 soup spoons of sugar, 1 soup spoon of cooking oil, 1 soup spoon of light soy sauce, ginger 10 g, garlic 10 g, 2 star anises, 3 bay leaves, 8 cloves, 15 pepper balls, scallion 30 g, 1/5 tea spoon of MG

Method: 
  1. Cut the ginger and garlic into slices. Cut the ribs into smaller parts.
  2. Cook some water in a pan. When the water boils, put the ribs into the water. Cook for 1 minute with quick oven. Take the ribs out from the pan.
  3. Melt the sugar in a pan with moderate oven. Put the ribs into the pan. Stir-fry with moderate oven for 5 mintues. Make sure the sugar sauce and ribs are mixed well.
  4. Put the cooking oil, ginger, garlic, star anises, cloves, bayleaves and pepper balls into the pan. Stir-fry with moderate oven for 3 mintues.
  5. Put some warm water into the pan. The water should cover the food in the pan.
  6. Cook with quick oven. When the water boils, switch to moderately slow oven. Put the scallion, light soy sauce, black soy sauce and MG into the pan. Cook for 50 minutes. Turn the ribs several times when cooking.
  7. If there is still water in the pan. Switch to quick oven. Cook until the water is almost dry.
  8. Take the ribs out from the pan.
