Cold spring roll of carrot and vermicellis

Material:

1 carrot (about 50 g), vermicellis 25 g, 1/4 spring onion, 2 soup spoons of light soy sauce, 1/2 tea spoon of salt, 1/4 tea spoon of vinegar, 1/2 tea spoon of sesame oil, spring roll wrappers

Method:
  1. Cut the spring onion into small bits. Cut the carrot into strings. 
  2. Cook the vermicelli with boiling water until the vermicellis become transparent. Take the vermicellis out from the pan. Cool the vermicellis with cold water.
  3. Mix the vermicellis, carrot strings, spring onion bits, salt, soy sauce, vinegar and sesame oil.
  4. Put some of the mixture of step 3 on a spring roll wrapper. Roll the wrapper from a corner of the wrapper towards the opposite angle. Pack the filling with the wrapper when rolling.
