Fried spicy chicken breast

Material:

Chicken breast 150 grams, 1/2 paprica, 1-3 dry chilies, 5-10 pepper balls, 1 star annise, scallion 20 grams, 1 tea spoon of salt, 1/2 tea spoon of sugar, 1 tea spoon of cooking wine (not necessary), ginger 10 grams, garlic 5 pieces, 4 soup spoons of cooking oil

Method:
  1. Cut the chicken breast into bits size about 2*2*2 cm. Cut the dry chilies into small segments. Cut the paprica into small pieces. Cut the scallion, garlic and ginger into small bits.
  2. Mix the chicken breast bits, cooking wine and salt. Wait for 15 minutes.
  3. Warm some cooking oil with a pan. Stir-fry the pepper balls, star anise and chilies for about 15 seconds with quick oven. 
  4. Put the ginger and garlic into the pan. Stir-fry for about 45 seconds with moderate oven. 
  5. Put the chicken bits into the pan. Stir-fry with moderately quick oven until the chicken breast meat is about 80% cooked. 
  6. Put the paprica pieces and scallion into the pan. Stir-fry with moderately quick oven until the pabrica pieces are soft.
  7. Put the sugar into the pan. Stir-fry for about 30 seconds with moderately quick oven.
