Fried chicken wings in Chinese spicy style

Material:

Chicken wings 400 g, 3 - 20 dry chilis, 6 pepper balls, 1 soup spoon of light soy sauce, 1/2 soup spoon of black soy sauce, ginger 15 g, garlic 5 pieces, 2 soup spoons of salt, 1 tea spoon of rice flour, 1 tea spoon of sugar, 1/2 tea spoon of vinegar, 3 spring onions, 4 soup spoons of cooking oil

Method:
  1. Cut the garlic and ginger into smaller chunks. Cut the spring onions into segments about 6 cm long. Cut the chilis into segments about 3 cm long.
  2. Mix the chicken wings and salt. Wait for about a half hour.
  3. Cook some water. After the water has boiled, cook the chicken wings with the water for about 2 minutes with quick oven. Take them out from the water. Let water drained from them as much as possible. Mix them with the rice flour.
  4. Warm the cooking oil with a pan. Put the ginger, pepper balls and garlic into the pan. Stir-fry for about 30 seconds with moderately quick oven. Take the ginger, garlic and pepper balls out from the pan. Put the chilis and spring onions into the pan. Stir-fry with moderately quick oven until the chili become dark brown. Take the spring onions and chilis out from the pan.
  5. Put the chicken wings into the frying pan. Stir-fry with moderate oven until they become a little yellow.
  6. Put the ginger, garlic, light soy sauce, black soy sauce, pepper balls, chilis and some water into the pan. The sauce in the pan should be over half part of the height of the wings in the pan. Cook with quick oven.
  7. When the sauce boils, switch to moderate oven. Cook until the sauce is almost dry. You should turn the wings several times to make sure that everywhere of the wings is cooked well.
  8. Put the sugar, vinegar and spring onions into the pan. Stir-fry with moderate oven for about 1/2 minute.
