Aubergine fried with sour chili pepper and pork

Materials: 

Aubergine 200 grams, pork 150 grams, sour chili pepper 20 grams, garlic 4 pieces, 1 soup spoon of salt, 5 soup spoons of cooking oil, 1 tea spoon of potato/rice flour, water 50 ml

Method:
  1. Cut the aubergine into pieces. Cut the sour chili pepper, spring onion and garlic into small bits. Cut the pork into small pieces.
  2. Mix the aubergine pieces and salt. Wait for 30 minutes. Clean the salt water.
  3. Mix the potato/rice flour and water.
  4. Warm 2 soup spoons of cooking oil with a pan. Put the aubergine into the pan. Stir-fry with moderately quick oven for about 2 minutes. Take the aubergine out from the pan.
  5. Put garlic and pork bits into the pan. Stir-fry with quick oven until the pork is cooked.
  6. Put the black soy sauce into the pan. Mix well the pork pieces and the black soy sauce.
  7. Put the sour chili pepper bits, spring onion and aubergine into the pan. Stir-fry with moerately quick oven for 1 minute.
  8. Pour the sauce of step 3 slowly along the edge of the pan into the pan. When the sauce is thick. Stir-fry with moderate quick oven for about 15 seconds.
