Aubergine fried with red chili pepper

Materials: 

Aubergine 200 grams, sour red chili pepper 50 grams, garlic 3 pieces, ginger 10 grams, 1 soup spoon of salt, 1 soup spoon of sugar, 2 soup spoons of vinegar, 1 soup spoon of oyster sauce, 2 soup spoons of cooking oil, 1 tea spoon of potato/rice flour, water 50 ml, 1/2 tea spoon of sesame oil, 1/2 spring oinion

Method:
  1. Cut the aubergine into pieces. Cut the sour red chili pepper, spring onion, garlic and ginger into small bits.
  2. Mix the aubergine pieces and salt. Wait for 15 minutes. Squeeze the water from the aubergine. Clean the salt water.
  3. Mix the potato/rice flour and water.
  4. Warm the cooking oil with a pan. Stir-fry the garlic and ginger bits with moderately quick oven for about 10 seconds. 
  5. Put the aubergine into the pan. Stir-fry with moderately quick oven for about 2 minutes. Take the aubergine out from the pan.
  6. Put the sour red chili pepper bits, sugar, vinegar and oyster sauce in the pan. Stir-fry with moderately quick oven for about 1 minute.
  7. Put the sauce of step 3 into the pan. Stir-fry with moderately quick oven until the sauce is thick. 
  8. Pour the sauce of step 7 from the pan to the aubergine pieces.
  9. Sprinkle the food with spring onion bits and sesame oil.
