Hui Guo Rou - Chinese double cooked pork recipe 1

Pork 250 grams, 1 chili pepper, 4-5 garlic sprouts, 1/2 spring onion, 2 tea spoons of sugar, ginger 10 grams, garlic 10 grams, 1 soup spoon of light soy sauce, 1/3 tea spoon of salt, salt bean paste 20 grams, cooking oil, cooking wine

1. Cut the pork, ginger and garlic into slices. Cut the pepper into pieces. Cut the garlic sprouts and spring onion into segements.
2. Cook the pork and cooking wine into some boiling water. Cook with boiling water until the pork is thoroughly cooked. Take the pork out from the water.
3. Cool the pork with cold water. 
4. Warm some cooking oil in a pan. Stir-fry the ginger, garlic and spring onion with moderately quick oven for about 10 seconds. 
5. Put the pork, pepper, sugar, soy sauce, salt and the bean paste into the pan. Stir-fry for about 2 mintues with moderately quick oven.
6. Put the garlic sprouts into the oven. Stir-fry for about 20 seconds with moderately quick oven. 
7. Pour everything in the pan into a plate/bowl.
